Yummy Din-Din and Advice Needed

Hey Everyone, I thought I would go ahead and share an all time favorite recipe with everyone. Amy posted this recipe about a year ago, and it is probably my favorite meatloaf recipe ever! I make it about once a month and never get tired of it. I use a mini-loaf pan which makes 8 perfect 5oz servings. Here is a picture and the recipe:



Amy's Hot Meat:

1 pound ground turkey
1 medium chopped/diced onion
1/2 cup bread crumbs
1/2 cup ketchup
1 cup mexican blend shredded cheese
1/2 cup feta cheese
1/4 cup honey mustard dressing
1 egg
Black pepper

Bake @ 350, until thermometer reaches 160 degrees. It took 35 minutes with my mini-loaf pan.

Also a good meatloaf recipe is one Nicole shared with me last year, VERY good and moist! Here it is:

1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 egg
3 slices bread, finely chopped (1 1/2 cups, lightly packed)
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce

*Substitutions*
I used ground turkey and used 1/2 cup of BBQ sauce it made it really moist! cooked it for just about 60 minutes, Also didn't do bread did bread crumbs.

1.Heat oven to 350°F. In large bowl, mix all ingredients except ketchup. Spread mixture in ungreased 9x5-inch loaf pan, or shape into 9x5-inch loaf in ungreased 13x9-inch pan. Spread ketchup over top.
2.Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads at least 160°F. Drain meat loaf.
3.Let stand 5 minutes; remove from pan.

Now for the advice I need. As Rick's surgery is quickly approaching, I am trying to think back to some post-op liquid/mushy recipes that I enjoyed. I remember one of my favorites being a ricotta cheese bake, which consisted of:


1/4 C Ricotta cheese
1/4 C Fat free cottage cheese
1 ounce mozzarella cheese
dash salt/pepper and parm cheese
1/2 C Marinara

Mix all ingredients in your magic bullet or other blender devise. Pour into personal size casserole dish; heat in oven at 400 for 15 minutes or microwave for 1 minute 30 seconds.

  1. I loved non fat refried beans with sprinkle of shredded cheese, salsa and non fat sour cream. It is a good protein source and one serving is less than 200 kcals. Best of luck to Rick.

  2. I am still on mushies and the ricotta cheese bake sounds great - going to make it.
    I also love the refried beans.
    One thing I have been doing is taking Southwestern Tortilla Soup w/Chicken (or another similar soup) - I add more chicken and puree with low fat mexican cheese blend. So good.
    Cottage cheese with pineapple and turkey meatball with sauce and low fat mozzarella are good too. Of course both are pureed.
    For protein shakes I love the Myloplex Lite from GNC. Could not stomache the Unjury at all. Best of luck to Rick!

  3. okay - you all are way more creative than I ever was - but.... I very much liked just plain mashed potatoes (homemade is best, but even the box will work) then mix it with cream of chicken soup. Wildly easy and tasty. Not great protein wise at all, but it totally met my needs to feel like I was eating real food for some reason.

    A good protein one was simple rotisserie chicken salad. Take a whole chicken, and put the meat in one bowl and throw the skin and bones away. Add celery, mayo (I think Hellman's works best and some pepper - and that's it. Depending on what stage I was in - eating wise - I would add a bit more mayo (I use their lite version) and mix the hell out of it in my food processor. It can be extremely mushy if I need it to, or just regular chunky chicken salad or anywhere in between. It's great alone, or on crackers too (when he's ready). Good luck to Rick!!

  4. I liked to make ground beef or turkey and make it with taco seasoning. I would put a small amount in a small bowl cover it with colby jack cheese and place under the boiler to melt. I would spoon salsa on the top after the cheese melted. Yummy! Very filling too!

  5. My favorite liquid meal was chicken enchilada soup:

    1 can condensed cream of chicken soup (I used the "healthy request" kind in the red can)
    1 can cheddar cheese soup
    1 can enchilada sauce (spicy or mild)
    1 can milk
    1 can water

    Mix all together and heat gently until warmed through.

  6. I made the same thing as Stephanie but I didn't use a can of water...just one can of milk. It made it a little thicker...but I loved it. I also loved the refried beans with a little cheese and sour cream! Cheddar was much better for me to eat the Mozzarella. Mozz was to stringy at first. I also bought some turkey chili and blitzed it. That was very Yummy! My all time fav thing I made was :

    The first time I didn't use the can of tomatos and it was wonderful! Wasn't spicy. But you could omit the pepper for sure.

    This will be a go to soup for me when ever. My husband liked it too!

  7. Yeah my absolute favorite was the refried beans with melted cheese, sour cream, and salsa. I ate that twice a day sometimes. It was the only thing I could eat that made me feel like I was actually eating. Eventually I started eating that with pita chips (naughty!)

  8. This post makes me hungry!! I make meatloaf prob 2-3 times a month :) So excited for Ricky!! What about Butternut squash soup? I love it with a dallop of sour cream yum Also campbells has a healthy request shrimp bisque (if he likes seafood)

  9. I haven't tried these yet, but they sound yummy.

    Cottage Cheese Pancakes

    These are melty, cheesy, with bits of onion... really good, and almost all protein! A very surprising dish given the 5 ingredients that are used. Double or triple this recipe and serve to the family... everyone will love these!

    Half a medium onion, chopped
    1 tablespoon butter
    1 egg
    1/2 cup cottage cheese
    2 tablespoons flour
    salt
    pepper

    Saute the onion in the butter until golden... allow to cool in pan. In a small bowl, beat egg slightly, blend in cottage cheese, flour, salt and pepper, and onion butter mixture. Heat nonstick skillet, spray with Pam, and place four 1/4 cup scoops of batter and spread into small pancakes. Cook until browned... flip and cook until lightly brown on other side.
