Delish Recipe!

I am stealing from everyone else, but I just thought the need to validate this recipe even more! Sarah and Cara posted a "dinner pancake" type recipe called easy cheesey pancakes, and Rick and I made them last night. SOOO GOOD! I think it'll be my new go-to meal when I don't have anything planned or feel like cooking much. Here is a link to the recipe, I followed Sarah's version exactly, but also dipped mine into sour cream to help moisten it up a bit. You can also check out Cara's version here. I ate about 3/4 of this serving and was satisfied for the rest of the night.



Also, I need to be completely honest. I was planning on attending spin class this morning, but just couldn't get my butt out of bed! I could go at another time, but Tuesdays @ 6am is the only time they offer a 30 minute class vs. the normal 60 minute. I really want to do to the 30 minute for my first time. There's always next week I guess.

  2. I know a 30 minute class sounds easier, but at least at my gym they're a bit more hardcore cause they're packing a whole workout into the shorter timeframe.

    Regardless, spinning is great because you can take it at your own pace!

  3. Thanks for the shout out! I had thought about adding sour cream but my child had eaten it all (LOL)... it kind of reminded me of a potato latke!

  5. I agree those pancakes are delicious. Also remember with spin that you control the intensity of the workout so you can turn down the resistance if you are buggered. Let us know how you go
